This easy recipe for coconut rice couldn’t be more simple or delicious. Ready in just 20 minutes, it makes the perfect delicately sweet and nutty base for any of your favorite curry recipes. Once you have the basic formula for making Instant Pot rice down, you can branch out with other flavor profiles as well, such as saffron rice and green rice.

2 Scallions, chopped
1 tsp. Granulated sugar
1 tsp. Kosher salt
1 tsp. Olive oil
1 can Unsweetened coconut milk, well shaken and stirred
1 1/2 cups Jasmine rice, rinsed and drained
Method

Combine rice, coconut milk, oil, salt, and sugar to the bowl of an Instant Pot, stirring to submerge rice completely in liquid.

Cover with a lid, and turn to the “rice” setting, making sure the steam valve is closed. When done, let stand for 10 minutes.

Open the steam valve, and allow remaining steam to escape. Carefully remove lid, and fluff with a fork. Top with scallions, and serve immediately.
