Jam-Filled Star Sandwiches A delicious shortbread cookie sweetened with jam and powdered sugar. The jam-filled center softens these star-shaped sandwich cookies making them tender, flaky and irresistible. They’re just in time for Valentine's Day! You can use any kind of jam to fill these; raspberry, peach, apricot, or use a variety to make a beautiful array of colorful sandwich cookies.

Ingredients

  • Shelled pistachio, for decoration

  • Powdered sugar, for dusting

  • 125 g Lemon marmalade

  • 100 g Chopped pistachios

  • 375 g Pastry flour

  • 2 Egg yolk

  • 1 tsp. Salt

  • 125 g Sugar

  • 250 g Butter

Method

    In the bowl of an electric mixer, beat the butter with the sugar and salt until light and fluffy. Stir in the yolks. Add the sifted flour and knead to a smooth dough.

    Knead in the pistachios, wrap the dough in plastic wrap and refrigerate 30 minutes. Preheat the oven to 350°F. Line a baking sheet with parchment paper.

    Place the dough on a floured surface and roll to 5 mm (approximately 1/4-inch) thickness. With a star-shaped cookie cutter, cut out stars with. Place on the baking sheet spacing them 2 inches apart.

    Bake until lightly browned, 10-15 minutes. Remove from the oven and carefully lift from the baking sheet to a wire rack to cool briefly.

    The top half of the stars with a little lemon marmalade and top with a star. Garnish with a dollop of jam and pistachio. Let cool and dust with powdered sugar.
