4 Large eggs
4 tbsp. Butter, softened
Avocado Mixture
1/4 tsp. Pepper
1/4 tsp. Salt
2 tbsp. Red onion, chopped
1 Ripe avocado, peeled, seeded

Combine the avocado, onion, salt, and pepper in a small bowl. Mash with a fork until well mixed, then set aside.

Melt 1 teaspoon of butter in a 10-inch skillet over medium-high heat until sizzling. Break 2 eggs into a pan, breaking the yolks with a spatula.

Cook until it’s set on the bottom, 2-3 minutes. Turn the eggs over and continue cooking until the eggs are cooked through about 2 minutes.

Remove the eggs from the pan; cover to keep warm. Repeat with 1 teaspoon butter and the remaining 2 eggs.

To assemble each sandwich, spread 1 tablespoon of the avocado mixture onto 1 side of each bread slice. Top 1 slice of bread, spread side up, with 1 fried egg, 2 slices of tomato, and 1 slice of cheese.
