What’s Thanksgiving without green bean casserole??? With this holiday only a little over a week away, we’re getting ready by adding a healthy and foodie twist to this traditional side dish. As in the creamiest and tastiest! This side dish can make a meal in and of itself by adding your protein of choice. Goodbye boring casserole, hello Vegan Green Bean Casserole!
Ingredients
1/4 cup crispy onions
1 tsp. rosemary
1/4 cup cashew butter
3/4 cup unsweetened almond milk
1/2 cup veggie broth
3 tbsp. whole wheat flour
2 cups mushrooms
1 tsp. garlic
1 tbsp. coconut oil
1 pound green beans

Preheat oven to 375 degrees F.

Bring a pot of water to a boil. Add in green beans, then lower heat. Cook for about 10 minutes.

In a separate pan, heat the garlic and coconut oil over medium heat. Add in the mushrooms and cook for about 5 minutes.

Add in the flour, then cook about 2 minutes. Next, mix the broth, milk, and cashew butter together. Add to the mushrooms and continue to cook until the sauce thickens. Remove from heat, add rosemary.

Place the green beans in a casserole dish. Top with the rosemary garlic mushrooms and mix in. Bake for 15 minutes.

Top the casserole with the crispy onions. Serve hot and enjoy!
