Ingredients

  • 1 lemon quartered

  • 2 tbsp. vegetable oil or olive oil

  • ½ lb crab meat pieces

  • 1 large egg slightly beaten

  • ¼ tsp. ground red pepper

  • ⅛ tsp. salt

  • ½ tsp. Worcestershire sauce

  • ½ tsp. Old Bay seasoning

  • 1 tsp. hot mustard

  • 1 tsp. freshly squeezed lemon juice

  • 2 tbsp. mayonnaise

  • 3 tbsp. finely chopped scallions

  • 1 tbsp. chopped parsley

  • 5 oz. panko or breadcrumbs

Method

    In a bowl, vigorously mix 3 oz. panko (or breadcrumbs) and all the other ingredients except the crab, olive oil and lemon.

    Add the crab and stir gently with a spatula until everything is incorporated.

    Add the remaining panko (or breadcrumbs) into a shallow dish.

    With wet hands, shape the crab mixture into 4 balls of equal size.

    Roll them in the panko.

    Gently flatten the crab balls to form 4 patties of about 4 inches in diameter.

    Heat the oil in a large nonstick skillet over medium-high heat.
