Pancake-breakfast morning is always a favorite in our house, but after a while, the usual-suspect add-ins, like chocolate chips, berries and bananas, get a little boring. Why not start the day with a colorful stack inspired by the rainbow? The kids will be sure to love this one. The best part (besides the fun colors and endless color combinations) is how easy this is to do. Just whip up your favorite pancake recipe (from scratch or mix, no one is judging here), and separate out about 1/4 cup of the batter into small bowls. Let the kids add the coloring, and watch pancakes go from boring to bold blocks of color. It’s also a great way to turn breakfast into a quick learning opportunity as you mix colors to form new ones. Stack them up high, and take a bite out of the rainbow for breakfast.

1 egg
1 tbsp. canola or vegetable oil
1 1/2 tsp. baking powder
1 tbsp. sugar
1 cup all-purpose flour

Preheat a pancake griddle over medium heat.

In a large bowl, whisk together all the ingredients except for the food coloring until smooth.

Separate the batter into smaller bowls in about 1/4-cup measurements.

Add drops of food coloring to each small bowl to create different colored batters.

Grease the griddle with baking spray or butter.

Cook the batter from each small bowl on the griddle (should make about 2 pancakes per color) for 1 to 2 minutes per side, until fully cooked.
