An easy cake mix cake with a beautiful layer of apples in the middle. This scrumptious cake is irresistibly moist. It's layered with apples, walnuts, and finished with a sweet glaze. With the bounty of apples this time of year it's the perfect way to celebrate the harvest season. When I have time I make my own apple filling, but when you're in a rush the canned filling is a real time saver. I hope you'll enjoy this cake as much as we do! Serve warm with a scoop of ice cream.
Ingredients
1/2 cup chopped walnuts
2 tsp. ground cinnamon
1/2 cup white sugar
6 apples - peeled, cored and sliced
1/2 cup vegetable oil
1 cup sour cream
4 eggs
1 package instant vanilla pudding mix
1 package yellow cake mix

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.

In a large bowl, stir together the cake mix and instant pudding mix. Add the eggs, sour cream and oil, mix until well blended. In a small bowl combine the sugar, cinnamon and walnuts.

Pour half of the batter into the prepared pan, then place a layer of sliced apples over the batter and sprinkle with half of the cinnamon walnut mixture. Pour the remaining batter over the top and repeat with the remaining apples and cinnamon walnut mixture.

Bake for 60 to 70 minutes in the preheated oven. Cool for 1/2 hour before removing from pan to cool completely.
