Crazy Guacamole Salad! So delicious and worth to taste! Gently combine all ingredients, except lettuce, in a large bowl until well combined. Serve atop shredded lettuce, if desired. This makes a really fun side dish, but if you’d like to turn it into more of a lunch situation, then just top a big pile of salad greens with some of this. Yum!

  • 1 cup cooked rice

  • 2 cloves garlic, finely minced or grated

  • 1/2 red onion, very finely chopped

  • 2 tbsp. juice from ime

  • 1 tomato, seeded and finely chopped

  • 2 ripe avocados, peeled, seeded and chopped
