Ingredients

Sugar Cookie Dough

  • 2 tsp. Vanilla

  • 1 tsp. Salt

  • 1 tsp. Baking Powder

  • 2 ½ cups Flour

  • 1 Egg

  • 1 ½ cups Sugar

  • 1 cup Butter

Pecan Pie Topping

  • 3 tsp. Vanilla

  • ¾ tsp. Salt

  • ½ cup of Butter

  • 4 tbsp. Pure Maple Syrup (NOT Pancake Syrup)

  • ⅔ cup of Coconut Milk (Full Fat)

  • 1 cup Brown Sugar

  • 2 cups Chopped Pecans

Method

    Preheat Oven to 350℉. In a large bowl cream together butter and sugar.

    Add in Egg and Vanilla and beat again with a hand mixer.

    Add in Flour, Baking Powder and Salt and stir gently until well mixed.

    Roll into 1 ½ inch balls and place on a cookie sheet 2” apart.

    Bake at 350℉ for around 9-10 minutes, Remove from oven and cool completely.

    In a separate pan, combine Brown Sugar, Coconut Milk, Maple Syrup, Butter and Salt. Cook over medium heat until everything is melted and well mixed and mixture begins boiling.

    Reduce to low and simmer for approx. 10 Minutes.

    Remove from heat and stir in vanilla.

    Cool completely before topping cookies - This is important so it doesn’t run off the cookie. It will be to the thing before it cools. Spoon about 1 Tbsp. of the mixture on top of each Sugar Cookie so that it fills the cookie but doesn’t fall completely off.
