Grandma pies said to originate in New York, have one attribute that is highly likable (beyond all the ingredients), it's the fact that it can be made in a standard baking sheet. The surface of the pizza is filled with cheese and a variety of toppings, including sausage, chicken, beef and other meat, as well as black olives, tomatoes, pineapple, and other rich vegetables and fruits.   • Crushed red pepper, for serving

  • 1 red onion, thinly sliced into rounds

  • 3 oz. sliced pepperoni (¾ cup)

  • 12 oz. part-skim mozzarella cheese, shredded (about 3 cups)

  • ½ tsp. kosher salt

  • ½ tsp. dried oregano, plus more for serving

  • 1 clove garlic, grated

  • 2 tbsp. heavy cream

  • 1 cup crushed tomatoes

  • 1 recipe Master Pizza Dough

    Preheat oven to 500°F with rack in lower third. Brush a large rimmed baking sheet with oil. Using your fingertips, stretch dough to corners of sheet. Cover with a dish towel; let rest at room temperature for 30 minutes.

    Mix tomatoes, cream, garlic, oregano, and salt in a bowl.

    Uncover dough; gently stretch to corners of the baking sheet if it has shrunk. Spread tomato mixture evenly over dough. Top with cheese, pepperoni, and onion.

    Bake until cheese is melted and crust is golden, 18 to 20 minutes. Top with crushed red pepper and oregano.
