This 30-minute quinoa recipe with sausage and roasted brussels sprouts is a perfect healthy meal for busy weeknights! A few ingredients come together to make a healthy, tasty dinner!

Ingredients

  • 14 oz. can petite diced tomatoes drained

  • 5 oz. package of seasoned quinoa or quinoa/brown rice blend

  • 12 oz. fully-cooked chicken or turkey sausage links sliced lengthwise and cut into bite-sized pieces, your choice of flavor

  • 1/2 tsp. chili powder

  • 1/4 tsp. garlic powder

  • 1/2 tsp. kosher salt

  • 1 tbsp. olive oil

  • 2 c. brussels sprouts

Method

    Preheat oven (or toaster oven) to 400℉. Toss brussels sprouts with olive oil, salt, garlic powder, and chili powder. Place Brussel sprouts and sliced sausage on a baking dish lined with aluminum foil. Roast for 20-30 minutes until sprouts are dark brown.

    Meanwhile, cook quinoa according to package directions, including spice package.

    Five minutes before quinoa is done, stir in drained tomatoes. Stir in cooked brussels sprouts and sausage, or arrange them over the top of each serving. Enjoy!
