There are so many guacamole variations out there and everyone can make it differently and mine is based on multiple trial and error attempts. Guacamole to go with said tacos. Why? I’m really not sure, especially after making my simple guacamole recipe on Sunday. It’s a miracle I still have some leftover to snack on because wow, did it taste good. New summer goal: add guacamole to the weekly rotation of snacks.
Ingredients
2 tbsp. cilantro, chopped
2 roma tomatoes, chopped
1/2 cup onion, diced
1 tsp. minced garlic
1 tsp. salt
1 lime
3 avocados
Method

Smash together avocado, juice of 1/2 the lime and salt in medium bowl, leaving some chunks of avocado.

Add in the minced garlic, onion, tomatoes and cilantro and stir until well combined.

For best flavor, chill at least 1 hour, or serve immediately. Garnish with leftover 1/2 lime and extra cilantro. Enjoy!
