You know you might be an addict if you start making copycat recipes of your favorite treats right? If you're addicted to Frappuccinos like we are, then you are going to absolutely love this cupcake. Coffee goes into both the cupcake and the frosting. If you skip your morning joe and go straight for a cupcake, we won't tell.

Ingredients

  • Chocolate syrup, for drizzling

  • Shaved chocolate, for garnish

  • Pinch of kosher salt

  • 1/4 tsp. Espresso powder

  • 1/2 c. Heavy cream

  • 5 c. Powdered sugar

  • 1 c. Butter, softened

  • 1/2 c. Mini chocolate chips

  • 1 c. Brewed coffee

  • 1/3 c. Vegetable oil

  • 3 Large eggs

  • 1 box Chocolate cake mix

Method

  • 01
Make cupcakes: Preheat oven to 350℉ and line two standard cupcake pans with 18 cupcake liners.
  • 02
In a large bowl, combine cake mix, eggs, vegetable oil, and coffee. Stir until well combined then fold in chocolate chips. Divide between cupcake liners and bake until a toothpick inserted into the middle of a cupcake comes out clean, 18 to 20 minutes.
  • 03
Let cupcakes cool in the pans for 10 minutes, then transfer to a cooking rack to cool completely.
  • 04
Meanwhile make frosting: In a large bowl, combine butter and about half of the powdered sugar. Using a hand mixer, beat until mixture is smooth, then add the remaining powdered sugar, heavy cream, espresso powder, and salt. Beat until the mixture is fluffy, then transfer frosting to a pastry bag fitted with a large closed star tip.
  • 05
Pipe frosting onto cooled cupcakes. Garnish with chocolate shavings and drizzle with chocolate syrup.
