I figured there was not a better party favorite to kick off my appetizer segment than some good ole’ buffalo chicken dip. There are a million variations out there, and I’ve been making this one for about 6 years. It never fails. We like to serve it with a plethora of dippers. Bread, pretzels, tortilla chips, crackers, and celery are just a few.

Ingredients

  • 2 tbsp. chopped cilantro

  • 2 tbsp. chopped chives

  • 3 tbsp. gorgonzola cheese, crumbled

  • 2 cups freshly grated cheddar cheddar cheese

  • 1 1/2 cups shredded chicken breast

  • 1 cup Hot Buffalo Wing sauce

  • 1/2 cup ranch dressing

  • 1/2 cup blue cheese dressing

  • 8 oz. cream cheese, softened

Method

    Preheat your oven to 375 degrees F. Spray a pie plate or 8x8 baking dish with nonstick spray.

    In a large bowl combine softened cream cheese, ranch dressing, blue cheese dressing, and buffalo wing sauce.

    Using a hand mixer, mix until smooth and creamy, about 3 minutes. Fold in the shredded chicken and 1 1/4 cups of the grated cheese. Pour into the baking dish. Top with remaining grated cheese.

    Bake for 20 to 30 minutes, or until dip is golden and bubbly. Top with blue cheese, chives and cilantro.
