I like a good bit of acidic/dry bite in my Sangria’s and of course, LOTS of fizz. This Christmas Cranberry Sangria recipe is all of that. The cranberries lend just the right amount of sweet tang to the sangria without making it cloyingly sweet. The Prosecco and soda water (club soda) add all the right amount of dry fizz that I so love and orange, rosemary and star anise bring Christmas to the party.
Ingredients
Christmas Cranberry Punch
orange slices
fresh rosemary
3 cups soda water/club soda
750 ml Prosecco
Cranberry syrup
Cranberry syrup
2 star anise
1 sprig rosemary
orange peel
1 cup water
1 cup sugar
3 cups frozen/fresh cranberries
Method

Combine all the ingredients for making cranberry syrup in a saucepan and bring to a boil.

Reduce the heat and simmer for 10 minutes until the cranberries are soft and the mixture has reduced slightly.

Remove from the heat and strain through a sieve, pushing down on the cranberries with the back of a spoon to get out all the juice. Allow the syrup to cool completely.

Fill a large jug with ice and pour over the cranberry syrup. Add the orange slices and rosemary then top with the Prosecco and soda water and serve.
