Grilled Chicken Mediterranean Salad

Chicken salad just doesn’t get any better than this one! This Mediterranean-inspired salad is loaded with the most amazing ingredients: marinated and grilled chicken breast; antipasti olives and peppers; tomatoes; kale; and let’s not forget the avocado! I love to serve this salad with a side of toasted baguette, too. I can go on and on about how much I love this recipe but you need to try it for yourself!

Ingredients

Salad

  • 1 Small yellow bell pepper, sliced

  • 1 Small red bell pepper, sliced

  • 8 - 10 cups Organic baby kale

  • 4 tablespoons Capers

  • 2 cups Antipasti combination salad

  • 2 Medium heirloom tomatoes, sliced

  • 2 Avocados, sliced

  • 1 teaspoon Garlic powder

  • 2 teaspoons Sea salt

  • 1 teaspoon Black pepper

  • 4 tablespoons Melted butter

  • 1 teaspoon Chili powder

  • 2 teaspoons Dried basil

  • 4 Large chicken breasts

Dressing

  • 1/2 teaspoon Salt

  • 2 teaspoons Dried basil

  • 1/4 cup Olive oil

  • 2 tablespoons Lemon juice

  • 1/4 cup Balsamic vinegar

  • 1/2 cup Red wine

Method

    In a small bowl, whisk all salad dressing ingredients and set aside. Arrange salad on serving platter or onto individual plates. Layer salad components over the baby kale. Sprinkle capers on top. Reserve the dressing until ready to serve.

    Combine seasonings for chicken in a small bowl. Remove chicken from refrigerator. Pour half of the butter over the chicken, coating evenly. Sprinkle and rub in the seasoning into the chicken. Preheat grill to 450F (low/medium). Place chicken on direct heat and close lid. Grill for 5 to 6 minutes on each side, turning once. Occasionally butter the chicken with a brush with remaining butter. Remove from grill and place onto serving platter or plates.

    Pour prepared dressing over the salad and serve.
