Roasted pork loin rubbed in cumin, brown sugar, and cayenne tastes insanely delicious when stewed with tomatoes and cauliflower. This is a slightly more spicy take on the paleo-style cauliflower fried rice with pork. You could use any protein. Adjust the poblano chili to mild it down or heat it as desired. Liquid amino can be used in place of the soy sauce if desired. You can also small pork chops for this recipe; about the size of your palm.

  • 3 cups Low-sodium chicken broth

  • 12 oz. Beer

  • 15 oz. Diced tomatoes

  • 1 Large head cauliflower, cut into florets

  • 2 tsp. Tomato paste

  • 1 Cayenne pepper

  • 2 tsp. Chili powder

  • 2 tsp. Ground cumin

  • 3 cloves Garlic, minced

  • 4 Green onions, thinly sliced

  • 1 Large onion, diced

  • 3 tbsp. Extra-virgin olive oil, divided

  • 1 tbsp. Garlic powder

  • 1 tbsp. Chili powder

  • 3 tbsp. Brown sugar

  • 2 pounds Pork loin, fat trimmed

    Preheat oven to 350℉. Rub pork with brown sugar, chili powder, and garlic powder and season with salt. Rub with 2 tablespoons olive oil and transfer to a parchment-lined baking sheet. Roast until center reaches 160℉, 1 hour and 15 minutes. Let rest, then cut into small pieces.

    Meanwhile, in a large pot or Dutch oven over medium heat, heat remaining oil. Add onion, green onions, garlic, cumin, chili powder, and cayenne and cook until tender, 8 minutes.

    Season with salt. Stir in tomato paste and cook, 1 minute. Add cauliflower, diced tomatoes, beer, and chicken broth. Add pork along with any juices and heat through.
