These Mini Apple Pies are easy to make and filled with a simple homemade apple pie filling. Cuter than traditional apple pie and cookies. The perfect mini dessert for fall! I have to say that I’m glad I did because these pies are delicious. While I love regular pie, there’s something about mini pies that make them so much better. Maybe it’s the fact that they’re perfectly portioned or they make a simple dessert you can just pick up and enjoy. Or maybe it’s that you can eat two and not feel so guilty about it.

Ingredients

  • 2 tbsp. Cinnamon sugar, for sprinkling

  • Egg wash, for brushing

  • 1 cup Caramel

  • 2 Refrigerated pie crusts

  • All-purpose flour, for work surface

  • Lemon juice

  • 1 tbsp. Cornstarch

  • 1/2 tbsp. Ground nutmeg

  • 1 tbsp. Cinnamon

  • 1/4 cup Brown sugar

  • 1/4 cup Sugar

  • 3 Apples, finely chopped

  • 2 tbsp. Butter

Method

    Preheat oven to 375℉ and line a baking sheet with parchment paper.

    Make apple pie filling: In a large pot over medium heat, melt butter. Add apples and cook until beginning to soften, then add sugars, cinnamon, and nutmeg and stir. Let cook a few minutes more, then add cornstarch and lemon juice. Remove from heat and let slightly cool.

    Roll out refrigerated pie crusts on a floured work surface. Slice one into long, 1/2" thick lattice strips. Set aside.

    Spread the second pie crust with caramel, then top with apple pie filling. Top half the lattice strips going one direction, then the remaining half going the other direction.

    Use a cookie or biscuit cutter to cut small rounds. Transfer to the parchment-lined baking sheet and discard scraps.

    Brush cookies with egg wash and sprinkle with cinnamon sugar.
