I often ask myself, who thinks up this stuff? So, I thought, okay, I'll play along since banana bread is one of my favorite things to enjoy with a cup of hot tea! My recipe for banana bread has a bit of a twist. I like to combine the creamy flavors of banana pudding into my bread batter and top it off with a wafer streusel. Enjoy it warm with butter, or cold the next day, either way, it's banned malicious! Vanilla pudding mix is the secret ingredient in this dessert-like loaf. It makes it super moist (sorry!) and adds that classic nostalgic banana pudding taste.

Ingredients

  • 3 cups Wafers, divided

  • 1 tsp. Pure vanilla extract

  • 2 Large eggs

  • 1/2 cup Melted butter

  • 1 package Vanilla instant pudding mix

  • 1 cup Mashed banana

  • 1/2 tsp. Kosher salt

  • 1/2 tsp. Baking soda

  • 1 tsp. Baking powder

  • 1/2 cup Granulated sugar

  • 1 1/4 cups All-purpose flour

Method

    Preheat oven to 350℉. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt until well-combined.

    In another medium bowl, mix bananas, pudding, melted butter, eggs, and vanilla until well-combined. Stir the banana mixture into the flour mixture until just mixed.

    Line the bottom of a loaf pan with wafers. Pour 1/3 of the batter on top of cookies, then cover the batter with another layer of wafers. Pour another 1/3 of the batter on top, then add another layer of wafers. Top with the rest of the batter. Crush the remaining wafers and sprinkle on top.

    Bake until golden brown and a toothpick comes out clean, 50 to 55 minutes. Allow to cool 10 minutes in pan, then turn out and let cool completely.
