Not sure what to bring? This cheesy ham quiche with a super-buttery, the flaky homemade crust is the perfect dish to make for brunch with friends, for your friend who just had a baby, or for your overnight family guests during the holidays. It is easy to make and can be prepared ahead of time, and, most importantly, it's always a crowd-pleaser. Can this recipe be adapted? Absolutely. You can swap in cooked bacon, crumbled sausage, chorizo, or chopped salami for the ham. Just about any cheese works well in a quiche. And green onions can easily be subbed out for pretty much any herb or leafy green. Not a fan of making a pie crust? I get it. Store-bought works.
Ingredients
1/4 tsp. Freshly ground black pepper
1/2 tsp. Kosher salt
6 Large eggs
3/4 cup Heavy cream
2 Green onions, thinly sliced
1/2 cup Shredded Monterey Jack
1/2 cup Shredded cheddar
1 1/2 cups Chopped ham
1 Premade pie dough
Method
01
Preheat oven to 375°F. Press dough into a 9" pie plate and crimp edges. Line crust with parchment paper and fill with dried beans or pie weights. Bake until lightly golden and set, 15 minutes. Remove pie weights and bake 5 minutes more until the bottom crust is golden. Let cool slightly.
02
Scatter ham, cheddar, Monterey Jack, and green onions in the bottom of the pie crust. In a large bowl, whisk together heavy cream, eggs, salt, and pepper. Pour egg mixture over filling in pie crust.
03
Bake until just set in the center, about 40 minutes. Let cool 15 minutes before slicing.
