No summer picnic is complete without a fresh fruit salad, and this bright recipe, with a simple lemon-ginger dressing, fresh herbs, and a few soft mozzarella cheese balls, is my absolute favorite.
You may notice that I got a little crafty and cut my melons into star shapes – I used a 2-inch cookie cutter, and I promise it wasn’t as fussy as it might seem :). Of course, you could just use a melon baller (or a knife) to save some time (and fun).
Ingredients
Lime and Honey Dressing
1/2 tbsp. Lime zest
1 tbsp. Honey
1 tbsp. Lemon juice
2 tbsp. Lime juice
1 tbsp. Fresh mint leaves
1 cup Watermelon
1 cup Blueberries
1 cup Raspberries
10 Halved cherries
10 Halved strawberries
Method
01
To make the dressing warm up the honey for a few seconds in the microwave, then mix it with lemon juice, lime juice and lime zest. Set aside.
02
In a medium serving bowl, combine cherries, strawberries, blueberries, raspberries and mint leaves. Drizzle the dressing on top and toss to combine.
